Pork 34.炸菜牛肉Pickled with Beef 35.蒙古牛肉Mongolian Beef 36.姜蔥牛肉Ginger & Green Onion Beef 37.豪油牛肉Oyster Sauce Beef 38.時菜牛肉Vegetable & Beef 39.豆腐牛肉Tofu and Beef 40.四川牛肉Szechuan Beef 41.檸檬牛肉Lemon Beef 42.椒鹽牛仔骨Pepper Salted Fried Beef Ribs 43.火腩塘虱煲Roasted Pork & Catfish Clay Pot 44.東江豆腐煲Tofu in Clay Pot 45.海鮮煲Seafood in Clay Pot 46.八珍煲Assorted Meat in Clay Pot 47.柱侯牛腩煲Stew Beef Basket 48.魚香茄子煲Eggplant in Clay Pot 49.蝦米粉絲煲Dried Shrimp & Noodle in Clay Pot 50.咸魚雞豆腐煲Salted Fish & Chicken Tofu in Clay Pot 51.蒸山水豆腐Steamed Tofu 52.紅燒豆腐Braised Tofu 53.麻婆豆腐Bean Sauce Tofu 54.干燒四季豆Braised Green Bean 55.魚香茄子Braised Egg plant 56.蒜茸豆苗Garlic Pea Greens 57.豉汁涼瓜black Bean Sauce & Bitter Melon 58.上湯芥菜膽Mustard Green 59.北菇扒菜膽Mushroom & Vegetable 60.清炒時菜Sautéed Vegetable 61.蒜茸芥蘭Garlic & Broccoli 62.豪油芥蘭Oyster Sauce Broccoli 63.豪油北菇Oyster Sauce Mushrooms 64.炒什菜Sautéed Assorted Vegetable1)琴酒(英文:Gin,荷文:Jenever,也可譯為金酒)是一種以谷物為原料經(jīng)發(fā)酵與蒸餾制造出的中性烈酒基底,增添以杜松子為主的多種藥材與香料調(diào)味后,所制造出來的一種西洋蒸餾酒。 由于琴酒的外文原名源自于它主要調(diào)味成分之一的杜松子(Juniper Berry),因此也經(jīng)常被稱為杜松子酒,只不過,在琴酒的種類里面有種少見的黑刺李琴酒(Sloe Gin),由于這種琴酒的調(diào)味并非使用杜松子為主,以杜松子酒的譯名泛稱全部的琴酒,會有點以偏蓋全誤導觀念的疑慮,以直接音譯的琴酒這稱呼較能避免不必要的誤解。 2)自古以來歐洲人一直使用刺柏漿果作為煮肉時的調(diào)味料,作為利尿的藥物使用,或在啤酒發(fā)酵的過程中添加刺柏漿果作為苦味的來源。刺柏漿果經(jīng)常在文學作品中出現(xiàn),中國的翻譯家不知道這種植物的名稱,因其類似于小松樹,故起名“杜松”,將其果實稱為“杜松子”。以杜松子為調(diào)味料所制造出的酒被翻譯成“杜松子酒”,是種在歐洲非常受歡迎的基礎烈酒。由于刺柏的法語名稱為“Genévrier”,所以杜松子酒常被簡稱為“Gen”,引進中國后被酒界翻譯成金酒(香港和大陸)或琴酒(臺灣),所以目前出現(xiàn)兩種名稱:在文學作品和詞典中經(jīng)常稱為“杜松子酒”;而在酒吧和調(diào)酒著作中則被稱為“金酒”或“琴酒”。 卡爾瓦多斯(Calvados) 這是種以蘋果為原料所做出來的白蘭地,法國諾曼底地方的特產(chǎn)酒。這并不意味此地所產(chǎn)的蘋果白蘭地,都能稱為 Calvados。因為和 Cognac 的地方一樣,依據(jù) A.O.C 法嚴格的規(guī)定,而分有各生產(chǎn)地區(qū)及制法,至于在規(guī)定之外,則只能稱為蘋果西打酒。此地是一寒冷的地方,不適合葡栽培萄,但是對于蘋果的栽培,從十六世紀就開始了,至于以蘋果做成白蘭地,則是十六世紀末亨利四世時代的事情。 匹斯可(Pisco) 葡萄經(jīng)過發(fā)酵、蒸餾制造而成,是BELLU和CHILLY生產(chǎn)的蒸餾酒。顏色很淡,酒精含量約40%。主要是作為餐前酒。"PISCO"這個名字好象是從南美原著民的名字來的。 雪莉(Sherry) 雪莉酒產(chǎn)自西班牙西南部安達魯西亞(Amdalusia),該地的土壤以及氣候造就了雪莉酒獨特的風格。它是以原料葡萄先晾干,等水分減少、糖分增加時才開始榨汁,同時為了提高酸味,會加入少許的石膏酦酵,然后再裝入桶中二次酦酵,最后再加入白蘭地增加酒精濃度。雪莉酒通常分為兩大類,一是菲諾(Fino),不含甜份,是一個很好的飯前開胃酒。另一是Oloroso,具有甜份,通常作為飯后酒。雪莉酒的顏色從透明到深黃、棕色都有,雪莉酒的甜度是受到發(fā)酵時加入白蘭地的時機所影響而有不同,越早加入則越甜,越晚加入反之則不甜,酒精濃度則是受到加入白蘭地的多寡而有不同。雪莉酒有種特別的儲存方式,稱為Solera system,是將木桶一層層往上迭,迭成金字塔形狀,最老的雪莉酒在下面,次老的放第二層,依此法往上放,酒齡越年輕的就放越上面,當從最底層的木桶取出酒后,上層酒桶中的酒會依序往下流,所以,雪莉酒以Solera system儲存,年輕的酒和老酒混和,使的其所流出來的酒,永遠保持一定品質(zhì)。 馬丁尼(Martini) 馬丁尼是一杯非常有名的雞尾酒,在所有雞尾酒中,馬丁尼調(diào)法最多,可高達兩百多種以上,故人們稱其為「雞尾酒中的杰作」、「雞尾酒之王」。馬丁尼是由「琴酒」3/2OZ以及「澀苦艾酒」1/2OZ,再加上橄欖一個或檸檬皮一片作為裝飾,口感銳利、深奧。馬丁尼澀苦艾酒可以應個人喜好而遞減至1/4OZ(Dry Martini)、1/8OZ(Very Dry Martini)、1/16OZ(Extra Dry Martini)甚至一點點,還有所謂的「Martini In and Out」,指的是苦艾酒在馬丁尼杯里繞了一圈再倒出來后,才加入琴酒?;魄倬埔部梢愿某煞丶泳?,稱之為「Vodka Martini」;若將澀苦艾酒改成甜苦艾酒,則稱為「Sweet Mrtini」;假使同時加入苦艾酒以及甜苦艾酒各半,稱為「Perfect Martini」。除了上述之基酒外,有人還會添加其它的酒,例如桔子苦汁(Orange Bitter)1滴等等的。還有一種很特別的調(diào)法稱為中國馬丁尼(Chinese Martini)是將琴酒的部分換成高梁酒來調(diào)。由此可知,馬丁尼真的是五花八門,調(diào)法非常多種。 苦艾(Vermouth) 苦艾酒的主要原料是葡萄酒、藥草、糖和酒精。他是用苦艾花、奎寧皮、葫荽、龍膽、肉桂、金雞納樹皮……等等數(shù)十種含有苦味的中藥材浸漬數(shù)個月之后,再摻入白葡萄酒(注∶紅葡萄酒、葡萄酒亦可)所制作而成的(有時還會加蒸餾酒下去提高酒精濃度)。苦艾酒除了可以純飲外,也常被用來調(diào)制雞尾酒。一般苦艾酒分成兩種,一種是甜苦艾酒(Sweet Vermouth or Rosso Vermouth),又可稱為意大利苦艾酒,糖份占全部的10%~15%左右,故稱之,其色呈暗紅色,味道甘苦稍帶甜味,這甜苦艾酒需陳年二年才會成熟,甜苦艾酒是調(diào)配雞尾酒「曼哈頓(Manhattam)」的主要原料。另一種是澀苦艾酒(Dry Vermouth),又可稱法國苦艾酒,其糖份占全部的4%以下,故稱為澀苦艾酒(有人也稱不甜的苦艾酒),其色呈白或淡青色,味甘苦較烈,這澀苦艾酒必須陳年四年才會成熟,同時也是調(diào)配雞尾酒「馬丁尼」的主要基酒。另外還有一種是介于甜苦艾酒以及澀苦艾酒之間,稱之為「Brisco Vermouth」??喟仆ǔJ怯迷陲埱皶r候喝的,用來增進食欲,又可消除疲勞。 龍舌蘭(Tequila) 龍舌蘭酒譯名提吉拉,它結(jié)合了古印地安文化以及西班牙文化的結(jié)晶,它采收自一種叫龍舌蘭的植物(Agave Plant)中的汁液精餾而得的酒,產(chǎn)自墨西哥提吉拉村。龍舌蘭又分兩類,其中他們有一種很特別的方式,就是把龍舌蘭采收后,每個人都給他吐口水,因為口水中有酵母菌,植物中有淀粉,就會產(chǎn)生反應變成酒精+二氧化碳,但這種酒只會留著自己喝,不會外銷,因為很臭。這種酒經(jīng)過蒸餾后酒精濃度高達50%以上(White Tequila)之后,才會裝瓶販售,但是還是會有腥臭味,顏色透明。蒸餾后的龍舌蘭酒再經(jīng)過橡木桶儲存上一年,橡木的顏色及香味就會滲到酒中,就形成了Gold Tequila,顏色呈淡淡的琥珀色。龍舌蘭酒有個十分特別的飲用方法,首先將鹽巴置于手背虎口上,用舌頭將鹽卷入口中,然后再將一小杯的龍舌蘭酒一飲而盡,再拿起一小片檸檬,將果肉嚼入口中,有時龍舌蘭酒也同時加冰塊及檸檬一起飲用。無論是風味或飲用方法,龍舌蘭酒就都非常的特別以及突出。
